Everything is made of particles.
In a solid they are fixed in place and touching.
In a liquid they still touch, but move past each other at random.
In a gas they are far apart and move fast.
Their energy and spacing explain heating, cooling and expansion.
Specific heat capacity, c, is the energy needed to raise one kilogram of a substance by one degree Celsius.
The energy is m times c times the temperature change.
Heating 1.5 kilograms of water, c 4200, by 40 degrees takes 1.5 times 4200 times 40: 252 000 joules.
A 50 watt heater warms a 2.0 kilogram aluminium block for 600 seconds, and its temperature rises by 15 degrees.
Energy in is 50 times 600, 30 000 joules, so c is 30 000 divided by 2.0 times 15: 1000.
The accepted value is about 900.
Some energy heated the air, so the measured value is too high.
A cooling curve for stearic acid.
The liquid cools, until at its freezing point the temperature stays flat.
The substance is not doing nothing: it is freezing, and releasing latent heat as fast as energy is removed.
Once it is all solid, the solid cools again.
To turn 0.10 kilograms of ice at 0 degrees into water at 20 degrees takes two stages.
Melting at 0 degrees: 0.10 times 334 000, 33 400 joules.
Then warming the water: 0.10 times 4200 times 20, 8400 joules.
The total is 41 800 joules; the melting needs four times more.
Conduction passes energy along a solid by particle vibration: the hot end's particles vibrate harder and jostle their neighbours.
In metals, free electrons carry energy quickly through the whole piece, which is why metals are good conductors.
Convection circulates a fluid.
Near the heater the particles gain energy and move apart, so that fluid becomes less dense and rises.
At the top it spreads out and cools, and the cooler fluid sinks to take its place: a convection current.
Evaporation turns the fastest surface molecules into vapour, so the liquid left behind is cooler.
It is faster at a higher temperature, with a larger surface area, with a draught over the surface, and in lower humidity.
The rate of energy transfer by heating grows with surface area and with the temperature difference.
Cooling fins on an engine or a computer chip maximise the area.
Animals show the same design: in hot climates large ears lose heat; in cold climates small ears keep it.
Most substances expand when heated.
That is a hazard for bridges and roofs, which need gaps and rollers.
It is also useful: a bimetallic strip is two metals joined.
When heated, the brass expands more than the steel, so the strip bends and breaks a circuit: a thermostat.
Four common mistakes. Using the final temperature instead of the change. Using m c delta theta while a substance melts or boils, when the temperature is not changing. Reading the flat part of a cooling curve as nothing happening. And saying heat rises: hot fluid rises, because it is less dense.
Check yourself.
Heating 2 kilograms of aluminium, c 900, by 30 degrees takes 54 000 joules.
Melting 0.5 kilograms with a latent heat of 330 000 joules per kilogram takes 165 000 joules.
Warm water rises because it is less dense; fins have a large area to transfer energy faster.
